Fish Taco Bowls

I made this one pretty close to how it says, but sadly it is not my favourite. Why? Because I don't like fish - ba, ha! So you may like it. I feel like I need to eat more fish and I have tried a very similar recipe before and didn't like it either. What I have been doing, which probably won't surprise you, is instead of using fresh cod I have been using beer battered frozen cod. I know, I am so healthy!!!! But, I will tell you... it tastes sooooo much better - lol! I love the idea of fish tacos and have had some decent ones that are low calorie options in restaurants, so keep wanting to try them at home, but I do not love cooking white fish - it stinks up my freezer and my whole house for 2 days when I cook it - yech! Sorry fish, why can you not be so smelly!


Here is my photo as proof that we tried it. My son ate two huge helpings of it in a wrap format, so it really could not have been that bad.

I used guacamole instead of avocado chunks and I added carrot straws to my cabbage mixture. My mango is hiding at the bottom and I did add some taco chips to make it more like a taco bowl. I need more good oils in my diet, according to my last blood work, so I allowed myself to fry this in a bit more olive oil than I probably should have - hey, it is good for my joints ;)
