Warm Pear Salad

This salad is familiar to me as my mom loves to make a poached pear salad with blue cheese. I used a mix of romaine lettuce and arugula as that is what I had on hand. I also added chopped celery for that chew factor. On top of my lettuce base I added a drizzle of maple Dijon dressing. (Have you noticed I am lazy and almost never make the homemade dressing they use?) I am letting olive oil be my friend right now, as my joints hurt, so although I am on a weight loss journey, I know I need those oils to help reduce my pain.... so into the frying pan went some olive oil. I fried up loads of onion and added my quartered pears right into the pan. As things became soft, I added a splash of balsamic vinegar, which personally I think makes them taste fantastic. I didn't use the pumpkin seeds with sugar, but if I was going to add some crunch, it would be toasted pecans most likely as I always have a container of them ready to go, but oops, I forgot to add them. The caramelized onion and pear were put on top, along with crumbled blue cheese and voila, a wonderful side salad to go with my leftover pork chops.
