Avocado Chicken Salad

I always find the names for these salads interesting, as there are so many different items in this salad that are equal to the avocado and chicken - how did they decide those two would be the STARS of the salad? The photo looks similar to a cobb salad to me, where the items are placed in sections. This one however has mango and red onion instead of bacon and hard boiled eggs.

I, of course, had to put my own spin on things, as usual. I decided I was going to make this salad last week, so bought the mango and avocado then as they would need time to ripen. I also bought corn on the cob and baby tomatoes, but guess what? We ate those already - lol! Finally today, I realized, oh shit... the avocado and mango are in their "perfect window" if I don't eat them today, they are going to be bad already. Then went into my fridge and pulled out everything else I needed to get rid of or would match the salad. I ended up with red pepper, shredded carrot sticks, hard boiled eggs, cheddar cheese OR blue cheese (salad maker's choice) and for the chicken I cooked up leftover chicken burger patties we had... no not the homemade healthy kind, but the breaded yummy one. FINE, you want to argue the homemade one is also yummy... sure, it is also yummy but... not quite in the same way as this comfort food from back in the day.
I mixed up the dressing the same as they did, except I did not have jalapenos, so used hot pickled ring peppers and some of my family have the cilantro "soap tasting gene", so I left that out and added it to my salad separately.

Great flavour combo in mine, but I couldn't eat it all. Blue cheese, red onion and cilantro with the tangy dressing and fruity mango was awesome! I didn't end up using my can of corn, we had lots to choose from already and no red peppers for me, but the boys ate those up no problem. Would totally make this again.
I bought the magazine so I could follow along with your blog. I am loving your salad posts! I made this salad as written and it was absolutely delicious.
