Antipasto Salad

I should know better than to alter a salad in hopes that my son will eat it, but that is what I did... and he still didn't eat it! I thought this salad was quite tasty, even with the alterations and would make it again. I forgot to take a picture of my salad, but it looked the same, except without the cheese and olives. I used baby potatoes which made it real easy and bite sized. I had fresh garden basil, which was to die for. After this recipe, I take back everything bad I ever said about parsley. It adds much more flavour and texture than I thought. It is easy to use up the rest of what you buy compared to cilantro too, as it can go in almost anything. I think this salad is unique compared to the regular salads you get at a buffet lunch and it would be an easy one to take as a guest. I worry that the olives might overpower this, as it already had great flavours, so personally I wouldn't even add those next time.
