Ramen Noodle Salad

This was a tasty salad that I would do again. I thought it was cool how they toasted the ramen in the oven, I have toasted nuts, but never noodles. We made this salad pretty close to the original. I bought a pre-cut bag of slaw mix instead of buying 2 cabbages though.
This could be a meal on its own, however it has no protein in it. You could easily add chicken, steak or tofu - we simply had BBQ chicken thighs on the side.
Next time I might add a bit more sauce - more soy sauce and rice vinegar or even add the spice package from the noodles. It was tasty as is.
In trying to lose weight, I did not put as many noodles on my salad. Ramen is tasty for sure, but very high in fat. Avocado and almonds already add extra points on the WW scale, plus the oils in the dressing. That's why if you added more soy sauce and rice vinegar it would be ideal. Keep the sesame oil and eliminate the olive oil... even though it is the healthier oil, you want the flavour of the sesame on this salad.
